The only official version I'd recommend would be The Empire Strikes Back. The "special edition" changes in that movie compared to the same versions of A New Hope and Return of the Jedi aren't that drastic, and aren't terrible. For A New Hope and Return of the Jedi I'd recommend going for the 4K77 / 4K83 or Harmy's Despecialized versions.
